Goats Milk Caramel

Instructions
  1. Add milk and sugar into a large pot and heat on low to medium heat.
  2. Once sugar has melted and you're just under a boil, add and gently stir in your baking soda*.
  3. Allow to sit and simmer, stirring occasionally or every 30 minutes. Once milk begins to darken stir every 15 minutes.
  4. Once you have a thickened caramel colored bubbly goop, your caramel is ready. If it drastically darkens you may have cooked it too far where you'll end up with hard toffee instead ooey gooey caramel. Total your looking at about 2 hours of simmering. An additional 15 minutes will you give you a thicker result.
  5. I pour the caramel straight into a mason jar and allow it to cool for about an hour or so at room temperature before putting it into the fridge. I end up with just over a pint of caramel.

*If you stir baking soda too vigorously it may foam over your pan.
