Ingredients
- 2.5 cups Gluten Free Flour
- 3/4 teaspoon Xanthan Gum (skip if your flour mix already has it)
- 1/4 cup Milk
- 1 cup Butter (melted)
- 4 eggs
- 3 cups Carrots (shredded - lightly packed)
- 1/3 cup Applesauce (unsweetened)
- 3/4 cup Brown Sugar (lightly packed)
- 1/4 cup Granulated Sugar
- 2 teaspoons Cinnamon
- 1/2 teaspoon Nutmeg
- 1/4 teaspoon Clove
- 1 1/4 teaspoon Baking Powder
- 1 teaspoon Baking Soda
- 1/2 teaspoon Salt

Instructions
- In a large bowl, mix all of your dry ingredients together with a whisk.
- Add remaining wet ingredients to the dry and mix well. I find it easiest to mix by hand.
- Pour batter into a greased 9X13 inch pan and bake for about 20 minutes at 350°F or until cooked in the center.
- Allow to cool completely before icing with your favorite cream cheese icing, whether it be home made or store bought. Enjoy!
