What Makes It Healthier?

The original base recipe I referenced this from asked for twice the sugar and added butter to the custard mixture. Neither has been missed. This new and improved version is still pleasantly sweet without unnecessary sugars and fats.

With my own crust recipe, sometimes I’ll swap out half the gf flour for almond flour or rolled oats ground into flour. They taste just fine and make for less starches.

Banana Cream Pie With Raw Goats Milk
I'm always trying to come up with creative and delicious ways to use our goats milk. This one turned out great! My family polishes this one off in only a couple of days.

Instructions
For The Filling
  1. Put sugar, cornstarch, and salt in a medium sized saucepan (no heat yet).
  2. In a separate bowl, whisk together the eggs and milk until well combined.
  3. Slowly pour the milk mixture into the dry mixture in the saucepan, whisking constantly while pouring, until completely smooth (still no heat yet).
  4. Now we turn the heat on medium and cook the custard mixture. Whisk constantly until it is thickened (about 5 to 6 minutes). Be patient, you'll start to see bubbles when it starts to thicken. But you don't want it boiling. If you have a thermometer you're looking for about 160-175°F (but no hotter). This part of the process kills the enzymes in the egg which will allow the custard to thicken properly.
  5. Once thickened, immediately remove the pan from the heat and stir in the vanilla until well incorporated.
  6. Pour the hot filling into a bowl and gently press plastic wrap on to the surface of the custard to prevent a film from forming. Refrigerate for at least 1 hour (or even overnight) until chilled.
Pie Assembly
  1. Now for the fun part. There's no right or wrong way to assemble the pie. Pour an even layer of your custard into your pie crust. Slice one banana into roughly 1/4-inch slices and make your first layer. Add another layer of custard, followed by you second banana (also sliced*). Pour the remaining custard on top and decorate as you please with more banana slices, whipped cream, sliced almonds, or shredded coconut. You could enjoy it now but it's best to chill it for another hour or so. Personally, I like to put it into the freezer to make it firmer.
Recipe Notes

*I don't personally love the banana slices and prefer to cut them into smaller bits that I mix into the custard and then just pour it all in. It's up to you!
