Two Ingredient Squash Gummies

I got this recipe from my friends and was just so impressed at how easy it was to make. You just need to chop up you zucchini in even slices. I prefer the circular slices the best as well as the full length slices that look much like fruit leather when it’s all done. The pieces and thin strips aren’t as appealing to me.

First time I tried making this recipe I chose to try both apple and grape. I used two different pans to cook the zucchini. I re-used the juice to make two batches total, not sure that I would do much more than that but I’m sure you could try a third round.

The dehydrating is the best time to take it easy and do something while it’s drying. I kept thinking it could over dry and get crunchy but it never happened. It stayed sticky until I removed them from the dehydrator and allowed them to cool.

It’s hard not to start nibbling on them right away. Once they’ve cooled they should be okay to put in a container or bag without sticking together.

Instructions
  1. Wash zucchini before slicing into preferred shapes (circles, strips, pieces). Make sure to slice into even sizes to ensure even drying time.
  2. In a small to medium sized sauce pan, boil veggies chunks in the fruit juice concentrate for 30 minutes. Turn off heat and allow to cool in the pan for an additional 15 minutes.
  3. Using a large serving spoon, scoop the zucchini out of the juice and place on a dish to pre-drain the juice before placing it on the dehydrator. Remaining juice can be used for at least one more batch of zucchini.
  4. Once drained, evenly space the zucchini on the dehydrator and start drying. Drying time will depend on the thickness of the the slices.
  5. Gummies are done once most of the moisture is gone, and they become more like fruit leather. They will never dry all the way, they solidify a bit more once they are taken off of the dehydrator and allowed to cool completely.
  6. Once dried and cooled, they are ready to eat, or can be stored in the fridge for about a week or so.
