Chewy Gluten Free Ginger Cookies
Crisp on the outside, nice and chewy on the inside. These are addictive!

Instructions
  1. Mix dry ingredients in one bowl, wet ingredients in another. Mix together to form a dough.
  2. Chill in the refrigerator for a least an hour before forming into small balls and baking in the oven at 350°F for roughly 12 minutes.
  3. Allow to cool and enjoy!
Recipe Notes

*My flour mix already has xanthan gum. In this recipe I'm adding an additional 1/4 tsp xanthan gum. It's optional but may give a better chew.
