Instructions
  1. In a good blender or food processor, grind up up oats into flour before adding remaining dry ingredients, followed by all of your wet ingredients.
  2. Pour into two 5 in round baking pans and bake at 375°F for 20-25 minutes or until golden brown.
  3. While the cake is baking, you can prepare the frosting. The day before you bake, place you can of coconut cream in the fridge to help with separating the liquids from the solids. Spoon out the solids into a bowl, add maple syrup, and whip for up to 2-3 minutes or until nice and creamy.
  4. Put coconut frosting back in the refrigerator until ready to use.*
  5. Once cakes are out of the oven, allow them to cool completely before frosting them and decorating as you please for your little one. Keep cake in fridge until the big event. Enjoy Smashing!
